While Covid-19 could very well be the worst nightmare the holiday season has ever known, many Filipinos will agree that what the pandemic has spawned is nothing but an insignificant blip on the Yuletide radar. That’s right, Christmas is definitely not cancelled in 2020, simply because no virus on earth stands a chance against peace, love, and happiness—the stuff that the most wonderful time of the year is made of.
In keeping with tradition, Winford Manila Resort & Casino (Winford) has dreamed up its own version of Santa Claus to usher in the holidays. His name is Winfredo, hails from Italy, and even has a similar build to the portly man in a red suit; except Winfredo lives in the kitchen of the luxury hotel and prefers to send smoke up the chimney instead of climbing through it.
This December, Winford proudly introduces three new exciting pizza flavors created by none other than Winfredo himself, giving full credit to the Italian chef mascot by aptly naming the new range Winfredo’s, but staying true to its Manileno roots by fusing each pizza variant with a distinct local flavor.
“The holiday season has always been a time of year for families to get together and enjoy the festive Filipino food they grew up with,” said Ryan Rabe, Director for Hotel Operations, Winford. “More than offering the usual comfort food staples associated with Christmas such as bibingka, we decided to go a step further and developed a fusion dish that combines some of the most iconic Pinoy cuisine with something popular and well-loved around the world.”
Winfredo’s initial lineup features three new and intriguing pizza flavors. There’s Sisig, a delightfully sinful Filipino dish made from parts of pig-head and chicken liver, seasoned with calamansi (Philippine lime), onions, chili peppers, and served with a sunny-side up egg. Then, there’s Quattro el Quezo, a rich combination of mozzarella, cheddar, quezo de bola, kesong puti, and served with a helping of truffle honey for that irresistible sweet and salty taste. Last, but not least, is a meat lover’s dream. Pizza con Salpicao is a delicious stir-fry beef dish seasoned with Worcestershire, butter, red chili pepper flakes, and garlic confit.
For now, Winfredo’s pizza is only available for dine-in and takeout from 3 p.m. to 2 a.m. daily.
