On Saturday 10 June, Chef Andrew Walsh from Catfish Izakaya in Singapore will collaborate with Chef Stephen Moore at Shelter Bali for a special Japanese-inspired feast.
The two acclaimed chefs will work together to create special dishes that blend their respective experiences and culinary philosophies into a unique and unforgettable menu finished with fire. Adhering to the original unpretentious spirit of an izakaya, expect a let-loose atmosphere with an element of mischief and fun, and a great cocktail programme featuring a cheeky drinking game called Sake Bomb Bingo.
“I’m thrilled to join Chef Stephen Moore in Bali and co-create a menu that draws inspiration from Japan and our shared passion for quality ingredients and innovative techniques,” said Chef Andrew Walsh. “I’m looking forward to collaborating around the woodfired oven and seeing what we can build together.”
Highlights of the menu include the Seasonal oysters with tosazu and tobiko; Wood-fired chicken skin skewer with yuzukosho and curried egg yolk; Seared tuna tataki with avocado and Shelter’s famous house-baked flatbread; Torched scallop with caviar and gochujang butter; Eggplant with miso butter and bonito flakes; Char-grilled striploin with wasabi and watercress; and Wood-fired snapper with coriander salad and white soy vinaigrette.
Cocktails will be crafted in-house by Shelter Bali’s head bartender Eugene Tolmach (of Mr. Tolmach YouTube fame), and feature locally sourced ingredients with innovative flavours to complement the diverse range of dishes served.
