Five years ago, there was only Skippy’s as food establishment at BGC specializing in Australian cuisine. Now there may be more so that the count of restaurants has come to 300.
Skippy’s is owned by lovely couple, Stephen and Cristina Bird, who, according to restaurant General Manager Ed Gerolin, are the most kind and philanthropist people he has ever encountered. Though busy with their respective careers and interests, the couple’s passion for food and dedication for service resulted to a relaxing food and beverage hub at The Fort—a sporty restaurant (complete with billiards table and HD screens to capture local and international sporting events: rugby, cricket, football/soccer, basketball, etc.) with music and live bands.
Skippy’s features the best local rock bands on Friday night, while Saturdays are slowed down a bit for a more relaxed vibe with the best popular bands from around the Philippines. Tuesday is videoke night, so come and sing your heart out with your favorite songs!
Although known for the all-time favorite Bourbon Ribs, lovingly prepared by Stephen himself for a total of eight hours, Skippy’s also serve Filipino food. No. 1 among its long-time and growing clientele of both locals and expats is the Pinoy pride, sisig. For those who want the pizza taste, Skippy’s has come up with Sisig pizza.
Another all-time favorite is the chicken wings specialty called Diablo Wings that comes on a promo every Monday to Wednesday from 11 a.m. to 2 a.m. Order a minimum of 15 pieces of these sweet-spicy fried wings with beer for just P10 per piece.

As the well-loved Australian hangout turns five this year, Skippy’s has come up with an affordable, delicious lunch menu: Beef Stew, Black Pepper Fish, Grilled Adobo Belly and Porkchop Steak. For less than P200 per order, customers have the chance to get free draft beer on their fifth plate of the lunch promo.
A bonus at Skippy’s nowadays is the impeccable and heart-warming service of its newly appointed general manager, Ed Gerolin. Gerolin has been in the hospitalty industry for more than three decades. He has become an institutional chef, a culinarian, hotelier/restaurateur and a college instructor. He said his passion is cooking, and he finds real joy in serving the customers of Skippy’s.
