Cupboard Corn Elotes
Ingredients:
4 pcssweet corn on the cob
4 tbspsoftened butter
4 tbspmayonnaise
3 tbspparmesan cheese
1 tbsplime juice
2 tbspfinely minced garlic
1/2 tspchili powder
salt to taste
for sprinkling
3 tbspparmesan cheese
1 tsppaprika
1 tbspchopped coriander
procedure:
1. Boil corn for 15 minutes.
2. After boiling, grill corn on high heat for 15 minutes or until some of the kernels blacken.
3. In a bowl, combine butter, mayo, cheese, lime juice, garlic and chili powder. Add a pinch of salt.
4. Brush mixture all over grilled corn.
5. Before serving, sprinkle some more cheese, paprika and chopped coriander over the corn.
