Ingredients:
For the pancakes
2 pcs large eggs, slightly beaten
1/2 tsp salt
1/4 cup sugar
4 cups warm fresh milk
2 cups all-purpose flour
2 tbsp vegetable oil
50 g butter
For the filling
100 g (4 oz) caviar
procedure:
- Mix the eggs, salt and sugar in a bowl of warm milk. Stir well. Add flour and beat until smooth. Let the dough rest in room temperature for 30 minutes. Add vegetable oil and stir well.
- Cook blini in portions on each sides in a well-heated cast iron frying pan, greased with butter. Put a little piece of butter on each pancake and fold into halves or quarters.
- To serve, top each folded blini with caviar.
