Although an IT-expert which he is still is, Bird has also decided to bring the best of Australian cuisine in the Philippines and his many food adventures around the world through Skippy’s. Lovely wife Tina also devotes much of her time personally tending to their store.

Skippy’s also serve Filipino food. And No. 1 among its long-time and growing clientele both local and the expats is the all-time favorite Sisig. But for the best taste of Australia, you may opt for Skippy’s Bourbon Ribs, lovingly prepared by Stephen himself for a total of eight hours. According to Bird, it’s a secret recipe which he has perfected for years. On tasting the ribs, you can immediately notice the smokey charcoal aroma of the sauce (make sure you spread the sauce residue from the plate before eating) which works well with the surprisingly tender meat. If you’re a rib fan, we are happy to share that the Bourbon wasn’t too overpowering in terms of flavor, but just right. Their bourbon ribs were slow-cooked Aussie style and served with homemade barbecue bourbon sauce served with steamed vegetables and a side of fries. Available at 300 grams, 800 grams, 600 grams and 1,400 grams. Other menus worth tasting are the following:

From Monday to Wednesday from 11:00 am to 2:00 am, one can order minimum 15 pieces of these yummy fried Diablo wings with beer for just Php 10.00 per piece. The chicken is very tasty and very similar in taste and comparable to a well-known restaurant which specializes on buffalo wings or Korean chicken.
